All the recipes in this blog are free from refined sugar and use either zero or low sugar natural sweeteners. 

The recipes are aim to be as low carb as possible too so they are all grain and gluten free – (except for one rogue cake that slipped in!).

Baked Apples

This is for anyone out there with an apple tree, who's knee deep apples at the moment. Or any other kindred cakespirit who just loves the flavour of seasonal apples.   How about giving baked apples a try? They’re such a simple and delicious end to a meal.  

These are baked apples with the sugar and sweetness volume turned down to make them healthier.  But believe me, nothing is lost.  They're still brimming with flavour with a scrumptious nutty, sticky texture.   

4 medium sized cooking apples
80g blueberries or morello cherries sliced in half
50g chopped walnuts
4 tsp hemp seeds 
1 tsp nut butter
1 tbsp low sugar syrup*
1 tsp milled sweetener**
1 tsp cinnamon
½ tsp ginger
½ tsp mixed spice
Lemon zest of 1 lemon or 1 tsp lemon essence

*I've used inulin (chicory root) syrup in this recipe.  Yacon syrup is also suitable.  It has a stronger caramel flavour.

**Natural sweetener options could include xylitol, erythritol, allulose. I used xylitol for this recipe. See Alternative Sweeteners page for more info. Each will have slightly different levels of sweetness. Adjust to taste.

Gradually mix all the ingredients together.
Core the apples and bake on a tray lined in baking paper for 10 minutes at Gas Mark 4/ 350C
Remove from the oven and fill the apples with the mixture.
Bake for a further 10 minutes.
Serve warm with crème fraiche or Greek yogurt.
