I’m a huge fan of cakes made with vegetables. They’re such an easy low carb substitute for wheat flour and they give a cake sponge a great consistency.

Upside Down Plum Cake

This lovely fruity cake was inspired by some beautiful ripe plums I bought recently. They begged me to incorporate them into a cake. Knowing better than to argue with a ripe plum I sliced and marinated them overnight in a smidgen of cinnamon, bayleaves and vanilla, to make their flavour sing. I then whizzed up this light, moist sponge with warm gingery undertones as a fitting throne to sit them on.Read more

Peach and Ginger Crumble Cake or Dessert

This gorgeous concoction of juicy ripe peaches, soft vanilla sponge and buttery crumble is based on a recipe I found in one of those supermarket magazines. It was a bit of a shot in the dark. Using a very different flour and an adjusted ratio of ingredients, there seemed a fair possibility I might have to dispose of large wobbly disaster. But I’m relieved and happy to announce this luxurious low carb version won the day. It really is a magnificent beast. Super-tasty too. And perfect for a late Summer treat.

Low Carb pastry (incl nut free option)
Before I changed to a low carb diet, I used to love my home-made pastry. The fuller flavour and melt in the mouth texture was worth the extra effort.
