The recipes are aim to be as low carb as possible too so they are all grain and gluten free – (except for one rogue cake that slipped in!).

Yacon syrup is a win win natural sweetener in my opinion. It contains sugars called fructoligosaccharides that are not digested by the body, so they don’t effect blood sugars in the way other natural syrups do, such as coconut nectar and maple syrup. Just a tablespoon or two of yacon syrup is enough to add that extra woo hoo! to a fruit crumble or baked fruit. Here I’ve added yacon syrup to some sliced banana, warmed through with a little butter. Then I’ve topped it with creamy plain yogurt and pecans. Alternatively, replace the banana with sliced apple and chopped fresh ginger. This is pure comfort and joy food. So simple and easy but flipping gorgeous!
